Ingredients 

Meatballs

  • 1 lb Ground beef
  • 1 cup Cooked rice
  • 1 Egg beaten
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Soup

  • 8 cups Chicken broth
  • 1 Onion chopped
  • 3 Carrots sliced
  • 2 Zucchini chopped
  • 1 can Tomatoes diced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large bowl, combine ground beef, cooked rice, beaten egg, minced garlic, salt, and black pepper. Mix well and form into meatballs.
  2. In a large pot, bring chicken broth to a boil. Add chopped onion, sliced carrots, chopped zucchini, diced tomatoes, cumin, oregano, salt, and black pepper. Stir well.
  3. Carefully add the meatballs to the pot. Reduce heat and let simmer for about 30 minutes, or until meatballs are cooked through and vegetables are tender.
  4. Serve hot and enjoy!
