- 2 cups elbow macaroni uncooked
- 3 large eggs hard-boiled and chopped
- 1 cup celery diced
- 1 cup onion diced
- 1 cup red bell pepper diced
- 2 cups mayonnaise
- ¼ cup white vinegar
- ¼ cup sugar
- 2 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Cook macaroni according to package directions. Drain and rinse under cold water. Set aside.
2. In a large mixing bowl, whisk together mayonnaise, vinegar, sugar, mustard, salt, and pepper until smooth.
3. Add the cooked macaroni, eggs, celery, onion, and red bell pepper to the bowl. Stir until well combined.
4. Cover and refrigerate for at least 1 hour before serving.
