  • 4 large Eggs
  • 1 cup Baby spinach chopped
  • ¼ cup Milk
  • ¼ teaspoon Salt
  • teaspoon Black pepper freshly ground
  • 1 tablespoon Olive oil

Instructions 

  1. 1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  2. 2. Heat the olive oil in a non-stick skillet over medium heat.
  3. 3. Add the chopped baby spinach to the skillet and cook for 1-2 minutes until wilted.
  4. 4. Pour the egg mixture into the skillet and cook without stirring for 2-3 minutes until the edges start to set.
  5. 5. Gently lift the edges of the omelet with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
  6. 6. Cook for another 2-3 minutes until the omelet is fully set but still moist. Fold the omelet in half and slide onto a plate. Serve immediately.
