  • 4 large potatoes baked and cubed
  • 1 cup sour cream
  • ½ cup mayonnaise
  • ¼ cup chopped green onions
  • ½ cup crumbled bacon
  • 1 cup shredded cheddar cheese
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce them with a fork and bake for 45 minutes or until tender.
  3. Let the potatoes cool, then peel and cube them.
  4. In a large mixing bowl, combine sour cream, mayonnaise, green onions, bacon, and cheddar cheese.
  5. Gently fold in the cubed potatoes. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving.
