Ingredients 

Main Ingredients

  • 4 large Russet potatoes peeled and cubed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon cooked and crumbled
  • to taste salt
  • to taste black pepper
  • 2 tablespoon chopped chives for garnish

Instructions 

  1. 1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. 2. In the same pot, add the diced onion and cook until translucent. Add the minced garlic and cook for another minute.
  3. 3. Add the cubed potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Use a potato masher to slightly mash the potatoes in the pot, leaving some chunks for texture.
  5. 5. Stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted and the soup is heated through.
  6. 6. Season with salt and black pepper to taste. Serve hot, garnished with crumbled bacon and chopped chives.
