Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 tablespoon Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 can Guinness beer
  • 2 tablespoon Tomato paste
  • 2 large Carrots, sliced
  • 3 stalks Celery, chopped
  • 2 large Potatoes, peeled and cubed
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon All-purpose flour for thickening

Instructions 

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  2. In the same pot, add the onion and garlic. Cook until the onion is soft.
  3. Return the beef to the pot. Add the beef broth, Guinness beer, and tomato paste. Stir to combine.
  4. Add the carrots, celery, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the beef is tender.
  5. In a small bowl, mix the flour with a bit of water to make a slurry. Stir the slurry into the stew to thicken it. Cook for another 10 minutes.
  6. Serve hot and enjoy!
