Ingredients 

Main Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
  3. Add chopped onion to the pot and cook until softened. Add minced garlic and cook for another minute.
  4. Stir in tomato paste, beef broth, and red wine. Bring to a simmer.
  5. Return the short ribs to the pot, add thyme and bay leaves. Season with salt and pepper.
  6. Cover and transfer to the preheated oven. Cook for about 3 hours or until the meat is tender and falling off the bone.
  7. Remove the thyme sprigs and bay leaves before serving. Enjoy!
