  • 1 cup all-purpose flour
  • 1 cup beer cold
  • 1 lb white fish fillets such as cod or haddock
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 quart vegetable oil for frying

Instructions 

  1. Heat the oil in a deep fryer to 375°F (190°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. Gradually whisk in the cold beer until the batter is smooth.
  4. Pat the fish fillets dry with paper towels and season with a little salt.
  5. Dip each fish fillet into the batter, allowing any excess to drip off.
  6. Carefully place the battered fish into the hot oil. Fry until golden brown and crispy, about 4-5 minutes per side.
  7. Remove the fish from the oil and drain on paper towels. Serve immediately.
