Ingredients 

Main Ingredients

  • 4 medium beets scrubbed and trimmed
  • ¼ cup walnuts chopped
  • ¼ cup fresh orange juice
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 ounces goat cheese crumbled
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and roast for 30 minutes or until tender.
  3. Let beets cool, then peel and cut into cubes.
  4. In a small bowl, whisk together orange juice, balsamic vinegar, olive oil, salt, and pepper.
  5. In a large bowl, combine beets, walnuts, and dressing. Toss to coat.
  6. Top with crumbled goat cheese and parsley before serving.
