Main Ingredients
- 1.5 cups All-purpose flour
- 0.75 cup Sugar
- 0.5 teaspoon Salt
- 2 teaspoons Baking powder
- 0.33 cup Vegetable oil
- 1 large Egg
- 0.33 cup Milk
- 1 teaspoon Vanilla extract
- 1 cup Fresh blueberries
Preheat your oven to 400°F (200°C). Grease a muffin tin or line with muffin liners.
In a large bowl, whisk together the flour, sugar, salt, and baking powder.
In a separate bowl, mix the vegetable oil, egg, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the blueberries.
Fill the muffin cups about ⅔ full with the batter.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
