Ingredients

  • 4 cups Broccoli Florets
  • 2 cups Cheddar Cheese, shredded
  • 1 cup Heavy Cream
  • 1 cup Chicken Broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Stir in the flour and cook for 2 minutes, stirring constantly.
  4. 4. Gradually add the chicken broth, stirring constantly to avoid lumps.
  5. 5. Add the broccoli florets and bring to a simmer. Cook until the broccoli is tender, about 10-15 minutes.
  6. 6. Use a blender to puree the soup until smooth. Return the soup to the pot.
  7. 7. Stir in the heavy cream and shredded cheddar cheese. Cook until the cheese is melted and the soup is heated through.
  8. 8. Season with salt and pepper to taste. Serve hot.
