Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 1 lb Andouille Sausage sliced
  • ½ cup Vegetable Oil
  • ½ cup All-Purpose Flour
  • 1 Onion chopped
  • 1 Bell Pepper chopped
  • 2 stalks Celery chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 2 teaspoon Worcestershire Sauce
  • 2 Bay Leaves
  • 1 cup Okra sliced
  • to taste Salt
  • to taste Black Pepper
  • ¼ cup Green Onions chopped, for garnish
  • ¼ cup Fresh Parsley chopped, for garnish
  • 6 cups Cooked White Rice for serving

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Gradually whisk in the flour to make a roux. Stir constantly until the roux is a dark brown color, about 20-30 minutes.
  2. 2. Add the chopped onion, bell pepper, and celery to the roux. Cook until the vegetables are tender, about 5 minutes. Add the garlic and cook for another minute.
  3. 3. Stir in the chicken broth, Cajun seasoning, Worcestershire sauce, and bay leaves. Bring to a boil, then reduce the heat and simmer for 45 minutes.
  4. 4. Add the chicken thighs and sausage to the pot. Continue to simmer until the chicken is cooked through, about 20 minutes. Add the okra and cook for another 10 minutes.
  5. 5. Season the gumbo with salt and black pepper to taste. Remove the bay leaves.
  6. 6. Serve the gumbo over cooked white rice. Garnish with chopped green onions and parsley.
