Ingredients 

Main Ingredients

  • 2 lbs Beef shank cut into chunks
  • 1 Onion quartered
  • 2 cloves Garlic minced
  • 4 cups Beef broth
  • 2 Carrots cut into chunks
  • 2 Zucchini cut into chunks
  • 2 Corn on the cob cut into thirds
  • 4 Potatoes quartered
  • 1 bunch Cilantro chopped
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. In a large pot, bring beef shank, onion, garlic, and beef broth to a boil. Reduce heat and simmer for 1 hour.
  2. 2. Add carrots, zucchini, corn, and potatoes. Simmer for another hour or until vegetables are tender.
  3. 3. Season with salt and pepper to taste. Stir in chopped cilantro before serving.
