- ½ cup unpopped popcorn kernels
- 1 cup brown sugar
- ¼ cup light corn syrup
- ½ cup butter
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ½ teaspoon vanilla extract
Preheat oven to 250°F (120°C). Place popped popcorn in a large roasting pan.
In a medium saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Stir constantly until mixture comes to a boil.
Boil without stirring for 4-5 minutes.
Remove from heat and stir in baking soda and vanilla extract.
Pour caramel mixture over popcorn, stirring to coat evenly.
Bake in preheated oven, stirring every 15 minutes, for 30 minutes.
Remove from oven and let cool completely before breaking into pieces.
