Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can diced tomatoes (400g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 eggs
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and red bell pepper. Cook until softened, about 5 minutes.
  3. Add minced garlic, ground cumin, paprika, and ground coriander. Cook for another 2 minutes.
  4. Add diced tomatoes, salt, and black pepper. Simmer for 10-15 minutes until the sauce thickens.
  5. Make small wells in the sauce and crack the eggs into each well. Cover and cook until the eggs are set, about 5-7 minutes.
  6. Garnish with chopped parsley and serve hot.
