Chana Masala

Main Ingredients
- 2 cups chickpeas cooked or canned
- 1 large onion finely chopped
- 2 cloves garlic minced
- 1 inch ginger minced
- 2 medium tomatoes chopped
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt or to taste
- 1 cup water
- 1 tablespoon lemon juice freshly squeezed
- 2 tablespoon cilantro chopped, for garnish
Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add chopped onions and sauté until golden brown.
Add minced garlic and ginger, cook for another minute.
Add chopped tomatoes and cook until they soften.
Add all the ground spices and salt. Mix well.
Add cooked chickpeas and water. Stir to combine.
Bring to a boil, then reduce heat and simmer for 15-20 minutes.
Stir in lemon juice and garnish with chopped cilantro before serving.
