Ingredients

  • 2 cups Rice
  • 4 pieces Chicken breasts boneless, skinless
  • 1 tablespoon Olive oil
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides.
  3. 3. Remove chicken from skillet and set aside.
  4. 4. Add rice to the skillet and stir to coat with oil.
  5. 5. Pour in chicken broth and bring to a boil.
  6. 6. Return chicken to the skillet, reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and chicken is cooked through.
  7. 7. Serve hot and enjoy!
