Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, diced
  • 6 cups Chicken Broth
  • 1 cup White Rice
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, celery, and onion. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add chicken and cook until browned, about 5 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Add rice, salt, and pepper. Reduce heat and simmer for 20 minutes, or until rice is cooked.
  7. Stir in parsley before serving.
