Chicken and Rice Soup

Main Ingredients
- 1 tablespoon Olive Oil
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 cup Onion, diced
- 2 cloves Garlic, minced
- 1 lb Chicken Breast, diced
- 6 cups Chicken Broth
- 1 cup White Rice
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 2 tablespoon Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add carrots, celery, and onion. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Add chicken and cook until browned, about 5 minutes.
Pour in chicken broth and bring to a boil.
Add rice, salt, and pepper. Reduce heat and simmer for 20 minutes, or until rice is cooked.
Stir in parsley before serving.
