Chicken Posole Recipe

- 2 lbs Chicken thighs boneless, skinless
- 1 can Hominy drained and rinsed
- 1 large Onion chopped
- 3 cloves Garlic minced
- 6 cups Chicken broth
- 2 teaspoon Cumin
- 1 teaspoon Oregano
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 Bay leaves
- 1 Lime cut into wedges
1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until translucent.
2. Add the minced garlic and cook for another minute.
3. Add the chicken thighs, chicken broth, cumin, oregano, salt, pepper, and bay leaves. Bring to a boil, then reduce heat and simmer for 45 minutes.
4. Remove the chicken thighs, shred them with two forks, and return the shredded chicken to the pot.
5. Add the hominy and simmer for another 15 minutes.
6. Serve hot with lime wedges on the side.
