Ingredients

  • 2 tablespoon Vegetable oil
  • 1 lb Chicken breast, thinly sliced
  • 4 cups Chicken broth
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 3 tablespoon Soy sauce
  • 2 tablespoon Miso paste
  • 4 oz Ramen noodles
  • 2 cups Baby spinach
  • 2 pcs Soft-boiled eggs, halved
  • 2 pcs Green onions, sliced

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
  2. Add the garlic and ginger, and cook for another 2 minutes until fragrant.
  3. Pour in the chicken broth, soy sauce, and miso paste. Bring to a boil, then reduce heat and let simmer for 10 minutes.
  4. Cook the ramen noodles according to package instructions. Drain and set aside.
  5. Add the baby spinach to the broth and cook until wilted, about 2 minutes.
  6. Divide the cooked noodles among four bowls. Ladle the broth and chicken over the noodles. Top with soft-boiled eggs and green onions. Serve hot.
