Chinese Chicken Fried Rice

Main Ingredients
- 2 cups Cooked rice preferably day-old
- 1 cup Cooked chicken diced
- 2 tablespoon Soy sauce
- 1 cup Frozen peas and carrots thawed
- 2 cloves Garlic minced
- 2 tablespoon Vegetable oil
- 2 pcs Eggs beaten
- 2 pcs Green onions sliced
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from wok and set aside.
In the same wok, add the remaining 1 tablespoon of vegetable oil. Add garlic and cook until fragrant.
Add the diced chicken, peas, and carrots. Stir-fry for 2-3 minutes.
Add the cooked rice and soy sauce. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
Return the scrambled eggs to the wok and mix well. Garnish with sliced green onions before serving.
