Cold Greek Tortellini Salad

Main Ingredients
- 1 package cheese tortellini about 9 ounces
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup kalamata olives pitted and sliced
- ½ cup red onion thinly sliced
- ½ cup feta cheese crumbled
- ¼ cup extra virgin olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- to taste salt and pepper
1. Cook the tortellini according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, olives, red onion, and feta cheese.
3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
