Ingredients

  • 500 g Green Beans trimmed and cut into 1-inch pieces
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Red Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Bring a pot of salted water to a boil. Add green beans and cook for 3-5 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
  2. 2. In a large mixing bowl, combine green beans, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to coat. Serve chilled.
