Main Ingredients
- 1 lb Crabmeat fresh or canned
- 2 tablespoon Butter
- 1 cup Heavy cream
- 2 cups Fish stock
- 1 small Onion chopped
- 1 clove Garlic minced
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and minced garlic. Cook until softened.
3. Stir in the crabmeat and cook for another 2-3 minutes.
4. Pour in the fish stock and bring to a simmer.
5. Use a blender to puree the mixture until smooth.
6. Return the mixture to the pot and stir in the heavy cream.
7. Season with salt and black pepper to taste. Simmer for another 10 minutes.
8. Serve hot with a sprinkle of fresh herbs if desired.
