Salad Ingredients
- 1 bag baby spinach washed and dried
- ½ cup dried cranberries
- ½ cup sliced almonds toasted
- ¼ cup red onion thinly sliced
Dressing Ingredients
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- to taste salt and pepper
In a large mixing bowl, combine the baby spinach, dried cranberries, sliced almonds, and red onion.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Pour the dressing over the salad and toss to coat evenly.
