- 8 large egg whites
- ¼ cup diced bell peppers any color
- ¼ cup diced onions
- ¼ cup spinach chopped
- ¼ cup shredded cheese optional
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 350°F (175°C).
Spray a muffin tin with non-stick cooking spray.
In a mixing bowl, whisk together the egg whites, salt, and black pepper.
Add the diced bell peppers, onions, spinach, and cheese (if using) to the egg whites and mix well.
Pour the mixture evenly into the muffin tin cups.
Bake for 15 minutes or until the egg whites are set.
Remove from the oven and let cool for a few minutes before serving.
