- 4 large tortillas
- 6 eggs beaten
- 1 cup shredded cheese
- 1 cup cooked sausage crumbled
- 1 cup diced bell peppers
- 1 tablespoon butter
1. In a skillet, melt butter over medium heat. Add beaten eggs and cook until scrambled.
2. Warm tortillas in a separate skillet or microwave.
3. Layer scrambled eggs, sausage, bell peppers, and cheese on each tortilla.
4. Roll up each tortilla into a burrito. Wrap each burrito in foil or plastic wrap.
5. Place wrapped burritos in a freezer bag and freeze.
6. To reheat, remove foil or plastic wrap and microwave for 2-3 minutes until heated through.
