  • 2 medium zucchini sliced into rounds
  • 1 cup all-purpose flour
  • 2 units eggs beaten
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup vegetable oil for frying

Instructions

  2. 2. In a bowl, combine flour, salt, and pepper.

  4. 4. In a third bowl, mix breadcrumbs and Parmesan cheese.
  5. 5. Dip zucchini slices in flour mixture, then eggs, then breadcrumb mixture.

  7. 7. Fry zucchini slices until golden brown, about 2-3 minutes per side.
  8. 8. Drain on paper towels and serve warm.
