- 2 medium zucchini sliced into rounds
- 1 cup all-purpose flour
- 2 units eggs beaten
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup vegetable oil for frying
1. Slice zucchini into rounds.
2. In a bowl, combine flour, salt, and pepper.
3. In another bowl, beat the eggs.
4. In a third bowl, mix breadcrumbs and Parmesan cheese.
5. Dip zucchini slices in flour mixture, then eggs, then breadcrumb mixture.
6. Heat oil in a frying pan over medium heat.
7. Fry zucchini slices until golden brown, about 2-3 minutes per side.
8. Drain on paper towels and serve warm.
