Greek Avgolemono Chicken Soup Recipe
A classic Greek soup made with chicken, rice, eggs, and lemon.

Main Ingredients
- 1 whole Chicken cut into pieces
- 6 cups Chicken broth
- ½ cup Rice uncooked
- 3 Eggs beaten
- 2 Lemons juiced
- to taste Salt
- to taste Black pepper
1. In a large pot, bring the chicken broth to a boil.
2. Add the chicken pieces and cook until done, about 20 minutes. Remove chicken and set aside.
3. Add the rice to the broth and cook until tender, about 10 minutes.
4. In a bowl, whisk the eggs and lemon juice together.
5. Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
6. Gradually add the egg mixture back into the pot, stirring constantly.
7. Shred the cooked chicken and return it to the pot. Season with salt and pepper to taste.
8. Serve hot and enjoy!
