Ingredients 

Main Ingredients

  • 1 kg Lamb shoulder cut into chunks
  • 2 tablespoon Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Tomatoes chopped
  • 1 cup Red wine
  • 2 cups Beef broth
  • 2 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 2 cups Potatoes peeled and cubed
  • 1 cup Carrots sliced

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
  2. Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
  3. Stir in chopped tomatoes, red wine, and beef broth. Bring to a boil.
  4. Add oregano, thyme, salt, and pepper. Reduce heat and simmer for 1 hour.
  5. Add potatoes and carrots. Continue to simmer for another 30 minutes, or until vegetables are tender.
  6. Adjust seasoning if needed. Serve hot.
