Instructions
Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
Stir in chopped tomatoes, red wine, and beef broth. Bring to a boil.
Add oregano, thyme, salt, and pepper. Reduce heat and simmer for 1 hour.
Add potatoes and carrots. Continue to simmer for another 30 minutes, or until vegetables are tender.
Adjust seasoning if needed. Serve hot.
