  • 4 large Eggs
  • ¼ cup Feta cheese, crumbled
  • ¼ cup Tomatoes, diced
  • ¼ cup Olives, sliced
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, whisk the eggs with a pinch of salt and pepper.
  2. 2. Heat olive oil in a non-stick skillet over medium heat.
  3. 3. Pour the eggs into the skillet and cook until they start to set.
  4. 4. Sprinkle feta cheese, tomatoes, and olives over one half of the omelet.
  5. 5. Fold the other half of the omelet over the filling and cook for another 2-3 minutes.
  6. 6. Slide the omelet onto a plate and serve hot.
