Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • ½ cup kalamata olives pitted and sliced
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Cook the quinoa: In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it cool.
  2. 2. Prepare the vegetables: While the quinoa is cooking, chop the cherry tomatoes, cucumber, red onion, and olives.
  3. 3. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  4. 4. Combine everything: In a large mixing bowl, combine the cooked quinoa, chopped vegetables, and dressing. Toss well to combine.
  5. 5. Add the feta: Gently fold in the crumbled feta cheese. Serve immediately or refrigerate for later.
