Main Ingredients
- 2 lbs Beef Stew Meat cut into chunks
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 3 cloves Garlic minced
- 1 cup Red Wine
- 2 cups Beef Broth
- 1 can Diced Tomatoes
- 2 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 2 pcs Bay Leaves
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add chopped onion and minced garlic. Cook until onion is translucent.
Pour in red wine, scraping up any browned bits from the bottom of the pot.
Add beef broth, diced tomatoes, oregano, thyme, and bay leaves. Bring to a boil.
Reduce heat to low, cover, and simmer for 2 hours, or until beef is tender.
Season with salt and pepper to taste. Serve hot.
