Greek Tortellini Salad

Main Ingredients
- 1 package cheese tortellini about 9 ounces
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion thinly sliced
- ½ cup kalamata olives pitted and halved
- ½ cup feta cheese crumbled
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- to taste salt and pepper
Cook the tortellini according to package instructions. Drain and let cool.
In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, olives, and feta cheese.
Add the cooled tortellini to the bowl.
In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately or refrigerate for later.
