Ingredients

  • 4 ears corn husked
  • 1 cup cherry tomatoes halved
  • 1 red onion diced
  • 1 cup cilantro chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the corn with a bit of olive oil and place on the grill. Grill for about 10 minutes, turning occasionally, until the corn is charred and cooked through.
  3. 3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a large mixing bowl.
  4. 4. Add the cherry tomatoes, red onion, and cilantro to the bowl with the corn.
  5. 5. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later. Enjoy!
