Instructions
1. Turn on the Instant Pot and select the sauté function.
2. Add a bit of oil, then sauté the onions and garlic until soft.
3. Add the chicken, carrots, celery, chicken broth, salt, pepper, thyme, and parsley.
4. Close the lid and set the Instant Pot to high pressure for 10 minutes.
5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
6. Remove the chicken, shred it, and return it to the pot. Stir well and serve hot.
