Ingredients 

Main Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 lb andouille sausage sliced
  • 1 lb shrimp peeled and deveined
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 cup celery chopped
  • 3 cloves garlic minced
  • 2 cups long grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon thyme dried
  • 2 pcs bay leaves
  • to taste salt and pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add the chicken and sausage, and cook until browned. Remove and set aside.
  2. 2. In the same pot, add the onion, bell pepper, and celery. Cook until softened.
  3. 3. Add the garlic and cook for another minute.
  4. 4. Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. 6. Add the shrimp, chicken, and sausage back to the pot. Cook until the shrimp is pink and cooked through, about 5 minutes. Season with salt and pepper to taste.
