Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 lemons, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups baby spinach

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add diced chicken and cook until browned, about 5-7 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Add orzo pasta, lemon juice, lemon zest, oregano, salt, and pepper. Reduce heat and simmer for 10-12 minutes, until orzo is tender.
  7. Stir in baby spinach and cook until wilted, about 2 minutes.
  8. Serve hot and enjoy!
