Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 6 cups Vegetable Broth
  • 1 can Diced Tomatoes 14.5 oz can

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions, garlic, carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes.
  3. 3. Stir in cumin, paprika, salt, and black pepper. Cook for another minute.
  4. 4. Add lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils are tender.
  6. 6. Taste and adjust seasoning if needed. Serve hot.
