Lobster Bisque Recipe

Main Ingredients
- 2 cups lobster meat cooked and chopped
- 1 cup heavy cream
- 4 cups fish stock
- 1 cup white wine
- 1 tablespoon tomato paste
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon butter
1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.
2. Stir in the tomato paste and paprika, and cook for another minute.
3. Add the white wine and fish stock, and bring to a simmer. Cook for 10 minutes.
4. Add the cooked lobster meat, heavy cream, salt, and black pepper. Simmer for another 10 minutes.
5. Use a blender to puree the soup until smooth. Strain the bisque through a fine mesh strainer back into the pot.
6. Reheat the bisque gently, and adjust seasoning if necessary. Serve hot.
