Ingredients

  • 1 cup Orzo
  • 1 cup Cherry tomatoes, halved
  • ½ cup Cucumber, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Kalamata olives, pitted and sliced
  • ¼ cup Feta cheese, crumbled
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. Cook orzo according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
