Ingredients

  • 4 cups potatoes, diced about 4 medium potatoes
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup kalamata olives, pitted and sliced
  • ¼ cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions 

  1. 1. Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper.
  4. 4. Pour the dressing over the potato mixture and toss gently to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
