Mediterranean Vegetable Stew

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Zucchini, chopped
- 1 Eggplant, chopped
- 1 Red Bell Pepper, chopped
- 1 can Diced Tomatoes
- 1 cup Vegetable Broth
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add chopped zucchini, eggplant, and red bell pepper. Cook for 5-7 minutes.
Stir in diced tomatoes and vegetable broth. Bring to a boil.
Reduce heat and add dried oregano and basil. Simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
