Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Zucchini, chopped
  • 1 Eggplant, chopped
  • 1 Red Bell Pepper, chopped
  • 1 can Diced Tomatoes
  • 1 cup Vegetable Broth
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add chopped zucchini, eggplant, and red bell pepper. Cook for 5-7 minutes.
  5. Stir in diced tomatoes and vegetable broth. Bring to a boil.
  6. Reduce heat and add dried oregano and basil. Simmer for 30 minutes.
  7. Season with salt and pepper to taste. Serve hot.
