Main Ingredients
- 1 lb shrimp, cooked and peeled
- 1 cup tomato juice
- ½ cup ketchup
- ¼ cup lime juice freshly squeezed
- 1 jalapeño, finely chopped optional
- ½ cup red onion, finely chopped
- ½ cup cilantro, chopped
- 1 cup cucumber, diced
- 1 avocado diced
- to taste salt and pepper
1. In a large mixing bowl, combine the tomato juice, ketchup, and lime juice.
2. Add the cooked shrimp, jalapeño, red onion, cilantro, cucumber, and avocado. Stir gently to combine.
3. Season with salt and pepper to taste.
4. Chill in the refrigerator for at least 30 minutes before serving.
5. Serve in individual cups or bowls, garnished with additional cilantro and lime wedges if desired.
