Ingredients 

Vegetables

  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups pasta (small shapes like ditalini or elbow)
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add garlic and cook for another minute.
  3. 3. Stir in zucchini, green beans, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes.
  5. 5. Add pasta and beans. Cook until pasta is tender, about 10 minutes.
  6. 6. Serve hot, garnished with grated Parmesan cheese if desired.
