Ingredients 

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 0.5 teaspoon salt

Wet Ingredients

  • 3 units eggs large
  • 0.75 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots
  • 1 cup grated apple
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cinnamon, baking soda, and salt.
  3. In another bowl, beat the eggs, then add the oil and vanilla extract. Stir in the grated carrots and apple.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the raisins and walnuts.
  5. Divide the batter evenly among the muffin cups. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
