Main Ingredients
- 1 cup Pearl couscous
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Feta cheese, crumbled
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Dijon mustard
- 1 clove Garlic, minced
- Salt and pepper to taste
1. Cook the pearl couscous according to package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
