Instructions
In a large bowl, mash the black beans with a fork.
Add the cooked quinoa, breadcrumbs, onion, bell pepper, garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
Add the egg and mix until everything is well combined.
Form the mixture into 4 patties.
Heat the olive oil in a large skillet over medium heat.
Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
