Ingredients 

Main Ingredients

  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • ½ cup breadcrumbs
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 egg
  • 2 tablespoon olive oil (for cooking)

Instructions 

  1. In a large bowl, mash the black beans with a fork.
  2. Add the cooked quinoa, breadcrumbs, onion, bell pepper, garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
  3. Add the egg and mix until everything is well combined.
  4. Form the mixture into 4 patties.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
