Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup parsley finely chopped
  • ½ cup mint finely chopped
  • 1 cup tomatoes diced
  • ½ cup cucumber diced
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let quinoa cool.
  4. 4. In a large mixing bowl, combine cooled quinoa, parsley, mint, tomatoes, and cucumber.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. 6. Pour dressing over quinoa mixture and toss to combine.
  7. 7. Serve chilled or at room temperature.
