Ingredients 

Main Ingredients

  • 6 large onions thinly sliced
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 8 cups beef broth
  • 1 cup red wine optional
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 2 cups Gruyère cheese grated

Instructions 

  1. 1. In a large skillet, melt the butter over medium heat. Add the onions and cook until caramelized, about 20 minutes.
  2. 2. Add the garlic and cook for another minute.
  3. 3. Transfer the onions and garlic to the slow cooker. Add the beef broth, red wine (if using), thyme, bay leaf, salt, and pepper.
  4. 4. Cover and cook on low for 8 hours.
  5. 5. Before serving, toast the baguette slices and grate the Gruyère cheese.
  6. 6. Ladle the soup into bowls, top with a slice of toasted baguette, and sprinkle with grated Gruyère cheese. Broil until the cheese is melted and bubbly.
